In Discourse case having HTML/JS aka structural accessibility makes it
much, much easier to understand and navigate than plain text emails.

Also its easier for people that use screen readers also to navigate it
because of that structure.

Also Discourse gives  a UI that makes more sense out of the box without
much setup that every individual has to do.

With XMPP it is much easier to create international channels for
example. Or the simple thing of posting your code in there directly.

And yet again XMPP affords many more features people have come to expect
from chats.
